EASY GREEN CURRY CHICKEN

Thai Green Curry with
Coconut Rice

Ingredients:

  • 1 cup rice

  • 1.4 liters coconut milk

  • 500g chicken (chopped)

  • 1 red onion

  • 1 garlic clove

  • 3 carrots

  • 100g green beans

  • 1 red capsicum

  • 1 bunch broccolini

  • 1 zucchini

  • 400ml coconut cream

  • 1 tsp ghee or coconut oil

  • Thai green curry paste (Ayam)

  • Salt & pepper

Method:

  1. Soak the rice overnight. Rinse it before cooking.

  2. Cook rice in 1 liter of coconut milk with a pinch of salt.

  3. Heat ghee or coconut oil in a large pan or wok. Add the chopped chicken and stir until fully cooked. Remove chicken from the pan and set aside.

  4. In the same pan, sauté the finely chopped red onion until soft.

  5. Add carrots, green beans, garlic, coconut cream, and green curry paste. Stir and cook until slightly softened.

  6. Add the remaining vegetables, and pour in more coconut milk for the desired sauce consistency. Let it simmer until vegetables are tender.

  7. Add the cooked chicken back into the pan and stir.

  8. Season with salt and pepper to taste.

  9. Serve the curry with the coconut rice. Enjoy!
