When you manage your weight you can do that without cutting out all of your favorites and that includes chocolate! Just make sure you use dark good quality chocolate like Lindt.
You’ll need:
150g dark (85%) Lindt chocolate
150g butter (I use raw butter)
2 tbsp cocoa
100g almond meal
6 eggs
1 cup caster sugar
1 tbsp pure vanilla bean extract
Method: Preheat oven at 180 degrees C (356 F). Melt chocolate and butter in pot over low heat. Once fully melted let cool down. Place eggs into a mixing bowl and beat until stiff. Gradually add the caster sugar and beat until dissolved. Add vanilla bean extract and cooled chocolate. Gently mix through almond and cocoa. Place mixture into round cake pan 20 x 5cm (8x2in). Bake for 50-55 minutes.
