BEEF CASSEROLE

This is the perfect dish for a slow cooker if you own one. Put in on and leave to cook ready for dinner.

What you’ll need:

1kg grass fed beef (I used a cut of topside here which turned out super soft)

1 large onion

2 cloves garlic

2 tbsp ghee

1/4 cup tapioca flour well seasoned with salt and pepper

4 large carrots

400g diced tomatoes

300ml beef broth (you can also use stock)

1 small sweet potato

5 potatoes

Method: Cut meat into large pieces. Toss the beef in seasoned tapioca flour. Add ghee to pot and sear beef. Once seared remove from pot and add onion and garlic. Cook until softened.

Return all the beef to the pot, add red wine and simmer until reduced. Add 3 carrots (cut into large pieces), tomatoes, broth and salt and pepper. Close with lid and slow cook for 4 hours.

For the mashed potato I like to use 4-5 potatoes (depending on how many people you serve), a small sweet potato (about 400g) and one carrot. Add salt. Once cooked add a little raw milk and grass fed butter.

Recipe easily serves 4 people.
